Malay food is generally rich and spicy. This arises from the use of natural ingredients like chilli, lemongrass, turmeric, coriander, cinnamon, ginger and coconut milk. 'Sambal', which is made from ground chilli, prawn paste and condiments, comes as a traditional accompaniment to many Malay foods. Among some must try dishes are 'nasi lemak', 'asam pedas', 'ikan bakar' and 'cendol'. Go off the beaten track in search of authentic Malay dishes in humble village premises, roadside stalls, cosy restaurants and hawker centres. |
