Malay food is generally rich and spicy. This arises from the use of natural ingredients like chilli, lemongrass, turmeric, coriander, cinnamon, ginger and coconut milk. 'Sambal', which is made from ground chilli, prawn paste and condiments, comes as a traditional accompaniment to many Malay foods. Among some must try dishes are 'nasi lemak', 'asam pedas', 'ikan bakar' and 'cendol'. Go off the beaten track in search of authentic Malay dishes in humble village premises, roadside stalls, cosy restaurants and hawker centres.

 
 
Nasi Lemak

Rice cooked in coconut milk and served with a variety of curries, 'ikan bilis', fresh cucumber, boiled or fried egg and 'sambal'. Nasi lemak is a chief breakfast favourite among Malaysians. Some popular Nasi lemak stalls can be found in:

Asam Pedas

Melaka is the home of 'asam pedas', a dish consisting of fish and vegetables cooked in assam (tamarind), tomatoes, pineapples, starfruits and pickled mustard leaves.

Cendol

A scrumptious dessert of green bean noodles flavoured with pandan juice (screwpine leaves) and served with shaved ice, thick palm sugar syrup and 'santan' (coconut milk). It's one of Melaka's best loved desserts, what more on a hot day.

Ikan Bakar (Grilled Fish)

Many stalls and restaurants are mushrooming around Melaka to cater to Malaysians and tourists with a liking for fresh seafood. Malay style seafood is grilled in a banana leaf or over an open grill.

Satay

Barbecued skewers of chicken, mutton or beef that comes with a spicy peanut and 'belimbing' (starfruit) sauce, sliced cucumbers, raw onions and 'ketupat' (compressed rice wrapped in palm leaf).
